Kiwifruit Jellies recipe

Ingredients:

2 lbs of kiwifruit, peeled.
Juice of 1 lemon.
3 cups of sugar.
2 tablespoons of unsalted butter.
1 cup of liquid pectin.
Green food coloring, if desired.
Superfine sugar.

Preparation Instructions:

Line an 8*10-inch pan with wax or parchment paper.

In a food processor, combine the kiwis, lemon juice and 1 cup of the sugar. Purée.

Pass the liquid through a food mill or fine strainer into a large saucepan.

Add the rest of the sugar; stirring constantly, bring to a boil.

Boil for 3 minutes; add the butter; still stirring, then boil for another 3 minutes.

Remove from heat and stir in the pectin and a few drops of coloring, if wanted.

Pour into prepared pan and allow to set overnight in a cool place.

Cut into shapes and roll in sugar.

Store in a cool place, in airtight containers, with wax paper separating the layers.
